Roasted Cornish Hens

  • 1/3 c. margarine or butter, melted
  • 1 tsp. dried snipped chives
  • 1 1/2 tsp. dried thyme, rosemary, crushed
  • 3 (1 to 1 1/2 lb.) Cornish game hens, halved

    Combine margarine, chives and thyme.

    Rinse hens.

    Pat dry. Place hens, breast side up, on a rack in a shallow roasting pan. Brush with some margarine and herb mixture.

    Cover loosely with foil.

    Roast in 375° oven for 30 minutes.

    Roast, uncovered, 45 to 60 minutes more, brushing three times during roasting with the herb mixture.
