- 1 bulb Fennel, Trimmed And Sliced
- 1 Tablespoon Olive Oil
- Salt And Cracked Black Pepper, To Taste

1Preheat oven to 425°F.

2Take fennel bulb, removing fennel fronds (green stuff that looks like dill), and slice off base of fennel. Thinly slice remaining fennel bulb and add to a small mixing bowl. Add oil and season with a generous pinch of salt and pepper. Mix well.

3Once oven is heated, place fennel on a baking sheet and spread it out. Roast for about 25 minutes or until fennel is nicely roasted and caramelized. Remove and serve.

4The end result is a nice and tender piece of fennel that is somewhat sweet, with a mild licorice flavor.
