Roasted Garlic Paste

3 ingredients
14 steps

Ingredients

  • 3 heads garlic
  • 3 tablespoons olive oil, plus extra for drizzling
  • Kosher salt

Directions

  1. 1
    Preheat the oven to 400F.
  2. 2
Remove the first layer of papery skin from the garlic.
  3. 3
Slice off 1/4 inch from the pointy top.
  4. 4
Place each head on a sheet of aluminum foil, cut side up.
  5. 5
Drizzle with the oil and season with salt.
  6. 6
Wrap each head in the foil and roast until the cloves are golden brown and soft, about 1 hour.
  7. 7
Remove from the heat and let cool.
  8. 8
(You can also do this on the grill, cooking over indirect heat.)
  9. 9
Remove the roasted cloves from their skins.
  10. 10
The most efficient way to do this is to squeeze the whole head from the bottom.
  11. 11
Using a fork, vigorously mix the garlic and oil together.
  12. 12
    Add a pinch of salt.
  13. 13
(If your recipe calls just for a clove or two of roasted garlic, you can remove it from the skin using a small escargot-style fork.)
  14. 14
This will keep, tightly covered, in the refrigerator for up to 2 days.
