Roasted Onion Dip

  • 2 medium onions
  • 12 teaspoon minced capers
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon tomato ketchup
  • 14 teaspoon rosemary
  • 14 teaspoon black pepper

    Preheat oven to 400.

    Place onions on a baking sheet and roast in a preheated oven until soft, about 1 hour.

    Let cool to room temperature and then peel and mince.

    (You should have 1 cup).

    In a bowl, combine onions, capers, vinegar, ketchup, rosemary and pepper.

    Serve immediately or refrigerate up to 3 days.
