Roasted Peppers

  • 3 large firm red peppers
  • 3 large firm green peppers
  • 1 garlic clove, minced
  • 1/4 c. olive oil
  • 1 Tbsp. vinegar
  • 1/2 tsp. salt

Directions

    Place peppers on baking sheet.

    Boil 4 to 5 inches from heat, 5 minutes on each side, or until entire surface of each pepper is blistered and blackened slightly.

    Cut each pepper lengthwise into eight strips.

    While still hot, scrape off skin with sharp knife. Remove ribs and seeds.
