- 3 large firm red peppers
- 3 large firm green peppers
- 1 garlic clove, minced
- 1/4 c. olive oil
- 1 Tbsp. vinegar
- 1/2 tsp. salt
Directions

1Place peppers on baking sheet.

2Boil 4 to 5 inches from heat, 5 minutes on each side, or until entire surface of each pepper is blistered and blackened slightly.

3Cut each pepper lengthwise into eight strips.

4While still hot, scrape off skin with sharp knife. Remove ribs and seeds.
