  • 12 whole Roma Tomatoes
  • 2 cloves Garlic
  • 1 whole Onion (small)
  • 1 whole Jalapeno Pepper
  • 1- 1/2 Tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1/4 teaspoons Salt To Taste
  • 3 Tablespoons Lime Juice
  • 1/4 cups Fresh Cilantro, Chopped

    Preheat the broiler.

    In a medium baking dish, place Roma (plum) tomatoes, garlic, onion and jalapeno pepper.

    Drizzle with olive oil.

    Checking often, broil for 5 to 10 minutes or until the outsides of the vegetables are charred.

    Remove the vegetables from the heat.

    Remove and discard tomato cores, jalapeno stem and garlic skins.

    In a food processor, coarsely chop the charred vegetables.
