Roasted Tomato & Shrimp Orzo

  • 1 cup Cooked Orzo Pasta
  • 1/2 cups Asparagus, Cut Into 1-inch Pieces
  • 3/4 cups Peeled Shrimp
  • 1 clove Minced Garlic
  • 1/2 cups Oven Roasted Tomatoes
  • 1/4 cups Chopped Kalamata Olives
  • 1 whole Lemon, Juiced
  • 1/2 cups Crumbled Feta

Directions

    Saute the asparagus in olive oil over medium heat for about 3 minutes.

    Season with salt and pepper.

    Add in shrimp and garlic and let cook for about 3 minutes.

    Add in oven-roasted tomatoes and olives; cook for an additional 3 minutes or until shrimp is cooked through.

    Add in cooked pasta and lemon juice; it will bubble down a little.

    Season with more pepper.

    Pasta water can be added if the pasta seems dry.

    Add feta and serve immediately.
