Ingredients

  • 1 Large zucchini, cut lengthwise in 1/2 inch strips
  • 1 large yellow squash, cut lengthwise in 1/2 inch strips
  • 2 large tomatoes, cored and halved
  • olive oil
  • salt and pepper
  • 1 jalapeno
  • 2 cloves garlic minced
  • 1 large shallot minced
  • 1/4 tsp hot Mexican Chili powder
  • 2 ears corn (1 1/2 cups)
  • 1/2 cup light cream
  • 3/4 cup shredded cheddar

    Grill the first 3 ingredients.

    Saute the garlic, shallots and jalapeno. Add chili and corn cook until caramelized. Add grilled vegetables cook until liquid evaporates, add remaining ingredients. season with salt and pepper
