  • 1 sweet onion, cut in half and then sliced
  • 1 red bell pepper, cored and then sliced
  • 1 fennel bulb, sliced
  • olive oil

    On a large cookie sheet, add all ingredients, making sure the olive oil covers all vegetables. Roast at 325° for 50 to 60 minutes or until golden brown. Serves 4.
