Roasted Wild Goose

- goose
- strong vinegar water
- salt
- 1/2 c. margarine
- 1 onion
- 1 apple, peeled
- 1 stalk celery
- 2 Tbsp. flour
- salt and pepper to taste
Directions

1Soak goose in strong vinegar water for about 2 hours before cooking.

2When ready to cook, rub goose well with salt and margarine.

3Put onion, apple and celery inside goose and place in a roaster.

4Cover and cook in oven at 325° until tender.

5The age of the goose will determine the length of cooking time.

6Remove goose to a serving platter.
