- 1 Tbsp. butter
- 1 1/2 tsp. tarragon
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 stalk broccoli (about 3/4 lb.)
- 1/2 head cauliflower (about 3/4 lb.)
- 2 small red onions
Directions

1Heat oven to 425°.

2Put butter, tarragon, salt and pepper in a shallow roasting pan.

3Put pan in oven just long enough to melt butter.

4Cut broccoli and cauliflower into florets.

5Cut onions into wedges.

6Toss onions in butter mixture and roast uncovered, 5 minutes.

7Stir in broccoli and cauliflower.

8Continue roasting until vegetables are tender, about 25 minutes.

9Yields 6 servings.
