- 8 chicken breasts, boneless and skinless
- 8 pats butter
- 4 tsp. tarragon
- flour
- 1 egg
- oil or Crisco
- 2 cans mushroom soup
- salt and pepper
- bread crumbs
- 1 Tbsp. water
- 1 can sherry
Directions

1Flatten chicken breasts somewhat (do not pound).

2Salt and pepper and place a pat of butter in them, with 1/2 teaspoon tarragon.

3Roll up the breasts and freeze.

4Dip frozen rolls in flour, then egg with 1 tablespoon water mixed, and again in flour and crumbs mixed together.

5Brown in oil or Crisco.

6Put breasts in baking dish.

7Add to pan mushroom soup and sherry.

8Stir and cook to boil.

9Pour over chicken.

10Bake at 350° for 1 to 1 1/2 hours.
