Ingredients

  • 2 yeast cakes
  • 1 1/3 c. shortening (oil)
  • 2 c. scalded milk (use nonfat dry)
  • 12 to 16 c. flour
  • 2 c. mashed potatoes (use potato flakes mixed as directed)
  • 1 c. lukewarm water
  • 1 c. sugar
  • 4 eggs
  • 2 tsp. salt

Directions

    Dissolve yeast and sugar in warm water. Add shortening, eggs and mashed potatoes. Add milk and flour alternately.

    Knead. Place in a greased bowl and let rise.

    Knead down.

    Put in refrigerator or make into rolls as desired.

    May leave in refrigerator overnight.

    Bake at 350° for 20 to 30 minutes until golden brown.
