Romanian Bean Soup

Ingredients
- 2 cups dried lima beans
- 8 cups water
- 1 large onion chopped
- 1 carrot peeled and sliced
- 2 garlic cloves crushed
- 1 beef bouillon cube
- 2 Tbsp. oil
- 1 medium onion finely diced
- 2 tsp. salt
- pepper to taste
Directions

1Soak lima beans 5-6 hours or overnight.

2Drain beans and rinse well to remove any loose shells.

3Place beans in crockpot with 8 cups of water, chopped onion, carrot, garlic and bouillon cube. Cover and cook on low for 18 hours or until beans are tender.

4Heat 2 Tbsp. oil in a skillet and saut diced onions until browned.

5Add onions to bean soup and stir.

6Salt and pepper to taste.

7Makes 8 servings.
