Romanian Bean Soup

Ingredients

  • 2 cups dried lima beans
  • 8 cups water
  • 1 large onion chopped
  • 1 carrot peeled and sliced
  • 2 garlic cloves crushed
  • 1 beef bouillon cube
  • 2 Tbsp. oil
  • 1 medium onion finely diced
  • 2 tsp. salt
  • pepper to taste

Directions

    Soak lima beans 5-6 hours or overnight.

    Drain beans and rinse well to remove any loose shells.
  3. 3
    Place beans in crockpot with 8 cups of water, chopped onion, carrot, garlic and bouillon cube. Cover and cook on low for 18 hours or until beans are tender.

    Heat 2 Tbsp. oil in a skillet and saut diced onions until browned.

    Add onions to bean soup and stir.

    Salt and pepper to taste.

    Makes 8 servings.
