- 4 eggs
- 3/4 cup sugar
- 2/3 cup extra virgin olive oil
- 2 tablespoons finely chopped fresh rosemary
- 1 1/2 cups unbleached all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
Directions

1Preheat oven to 325.

2Prepare a 10 inch loaf pan with cooking spray.

3In electric mixer, whip eggs for 30 seconds with whip attachment.

4Add the sugar and continue to whip till foamy.

5Drizzle in olive oil.

6Using a spatula, gently fold in the rosemary leaves.

7In a separate bowl, whisk together the flour, baking powder, and salt.

8With mixer on low, add dry ingredients.

9Pour into prepared pan.

10Bake for 45-50 minutes, rotating the pan halfway.

11Cool in pan.
