- 6 to 8 potatoes
- 1 large onion
- 1 tsp. salt
- 3 Tbsp. butter
- 1 1/4 c. grated Cheddar cheese
Directions

1Peel potatoes and onion.

2Finely chop onion.

3Finely shred potatoes.

4Combine potatoes, onion and salt.

5Heat 2 skillets. Divide butter between them.

6Heat butter until slightly brown.

7Add half of potato mixture to each skillet.

8Cook for about 8 minutes, stirring once or twice.

9Add grated cheese and firmly press mixture.

10Cook, covered, for about 5 minutes until bottom is crisp. Quickly turn potato cakes over and cook on other side for 5 minutes.

11You may split potato cakes in half for easier handling. Serve immediately.
