- 2 pounds red potatoes
- 1 cup onions
- 3/4 bacon chopped into small pieces
- 1 teaspoon salt each, and pepper, or to taste
- 1 teaspoon cornstarch
- 2 tablespoons bacon fat or butter
- 2 tablespoons olive oil
Directions

1Grate potatoes into long thin strips.

2Rinse in cold water.

3Squeeze dry in a dish towel to remove moisture.

4In a bowl mix potatoes and cornstarch.

5Add onions and bacon, and season with salt and pepper and mix.

6In a large skillet heat 2/3 of the fat/oil to medium heat.

7Add the potato mixture.

8Cook covered for 5-6 minutes, then uncovered for 3-4 minutes more until the bottom is golden.

9Flip over and cook the other side.

10Add the remaining fat/oil as necessary to prevent sticking
