Apple and Date Cakes

- 125 g dates
- 1 apple
- 175 g butter
- 175 g sugar
- 3 eggs
- 200 g self-raising flour
- 1 teaspoon cinnamon
Directions

1Preheat the oven to 180C/160C fan/Gas 4.

2Line muffin trays with paper muffin cases.

3Cut the dried dates into raisin-sized pieces and the apple into 5mm pieces.

4Beat the butter and sugar until soft and creamy.

5Add in the eggs, one at a time, mixing well between each addition and adding 1tbsp flour with the last egg.

6Sift in the rest of the flour and cinnamon, then stir in the fruit until just evenly mixed.

7Divide between the cases and bake for 25 minutes or until the tops spring back when lightly pressed.

8Cool on a wire rack.
