  • 1 c. juice (from canned pickled beets)
  • 1 c. vinegar
  • 1 clove garlic
  • 1 medium bay leaf
  • 2 tsp. mixed pickling spices
  • 1/2 tsp. salt
  • 12 hard-cooked eggs
  • 1 small onion, separated into rings

Directions

    In a large bowl, combine beet juice, vinegar, 4 cups water, garlic, bay leaf, pickling spices and salt.

    Mix well. Cover and refrigerate for several days. Makes 12 pickled eggs.
