  • 6 to 8 potatoes
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 (4 oz.) can mushrooms
  • 1 lb. Velveeta cheese
  • 1 can Ro-Tel
  • 1/2 stick butter

Directions

    Cook onion and pepper in butter.

    Add remaining ingredients. Blend together.

    Cook potatoes until almost done.

    Then pour onion mixture over potatoes and bake at 350° until bubbly.
