- 8 each potatos
- 1 tsp salt
- 1 each small onion, chopped
- 3 tbsp melted butter
- 1 can 15 oz miod rotel
- 1 lb velveeta cheese, cubed
Directions

1Prepare 9x9 inch baking dish with cooking spray

2Cook potatoes with skin on in salted water for 30 minutes until fork tender, drain and allow to cool, then peel and dice.

3Place potatoes in the bottom of the casserole dish
-
4In skillet, melt butter and then saute the onion until tender
-
5Add in Rotel and cubed cheese.

6Stir constantly until the cheese has melted and everything ic combined well.

7Pour over potatoes.

8Bake for 30 minutes at 350
