Rotel Rice Casserole

  • 1 lb. ground beef
  • 1 chopped onion
  • 1 chopped bell pepper
  • garlic to taste
  • 1 can Ro-Tel tomatoes (drain 1/4 of juice and fill back with water)
  • 1 c. dry instant rice
  • 2 c. grated cheese
  • 1 can cream of mushroom soup
  • salt to taste

Directions

    Brown meat and drain. Add onion, bell pepper and garlic; cook until tender. Add tomatoes and juice; cook about 10 minutes in skillet. Add instant rice, soup and salt. Pour into casserole dish; bake at 350° for 20 minutes. Remove from oven and top with cheese. Return to oven for 10 minutes.
