Ingredients

  • 150 grams Bread flour
  • 50 grams Cake flour
  • 3 grams Dry yeast
  • 20 grams Sugar
  • 3 grams Salt
  • 16 grams Skim milk
  • 28 grams Butter
  • 120 grams Egg yolk (1) + water
  • 1 Beaten egg (for glazing)

Directions

    Put all the dough ingredients in a bread maker, and let it knead the dough.

    Allow the dough to rise (1st proofing) at 30C until it is double in size.

    Press the air out, and divide into 8 portions.

    Roll into balls, and let them sit for 15 minutes.

    Reshape them, and allow them to rise (2nd proofing) at 36C for 30 minutes.

    Brush the surfaces with the beaten egg.

    Bake in the oven for 10 minutes at 180C.

    And they're done.
