- 2 lb. round steak, cut thin
- 1 pkg. individually wrapped saltine crackers
- salt and pepper
- 1 onion, chopped fine
Directions

1Roll out crackers to make crumbs; add chopped onion, salt and pepper.

2Cut steak into 4 x 6-inch pieces.

3Fill with cracker mixture and a strip of ham fat or a piece of bacon, cut about 1-inch thick.

4Roll and hold together with toothpicks.

5The ham fat makes a moist dressing.

6Brown steak rolls in a heavy frying pan.

7Add a little water and simmer about 1 hour.

8Add more water if necessary.

9If you have any cracker crumbs left over, put into pan when steak is done to thicken sauce......(makes a nice gravy).
