Ingredients
- 3 eggs
- 3/4 c. granulated sugar
- 2 c. all-purpose flour
- banana leaves, wilted
- 4 tsp. baking powder
- 1 1/4 c. coconut milk
- 1/2 c. grated cheese
Directions

1Beat eggs until light and creamy.

2Add sugar gradually beating well after each addition.

3Sift flour and baking powder together. Beat dry ingredients alternately with coconut milk.

4Pour batter into 29-inch layer cake pans that have been greased and lined with wilted banana leaves.

5Bake at 350° for 10 minutes.

6Take out pans and sprinkle with cheese.

7Bake 20 minutes more.

8Brush twice with margarine while baking.

9When done, brush again with margarine and sprinkle with sugar.

10Serve with freshly grated coconut.
