Royal Rice Custard

Ingredients

  • 3 c. milk
  • 1/2 c. rice
  • 3 whole eggs
  • 3 egg yolks
  • 6 Tbsp. sugar
  • 1/4 tsp. salt
  • 1/2 tsp. almond extract

Directions

    Cook rice in 1 cup boiling water and 1/2 teaspoon salt until tender.

    Drain and rinse in cold water.

    Scald the milk.

    Beat the whole eggs and yolks slightly with the sugar, 1/4 teaspoon salt and almond extract.

    Add the scalded milk gradually to the egg mixture, then stir in rice.

    Pour into a 2-quart buttered casserole.

    Set in a pan of hot water and bake at 350° for 1 hour and 15 minutes, or until knife inserted in center comes out clean.
