- 3 c. milk
- 1/2 c. rice
- 3 whole eggs
- 3 egg yolks
- 6 Tbsp. sugar
- 1/4 tsp. salt
- 1/2 tsp. almond extract
Directions

1Cook rice in 1 cup boiling water and 1/2 teaspoon salt until tender.

2Drain and rinse in cold water.

3Scald the milk.

4Beat the whole eggs and yolks slightly with the sugar, 1/4 teaspoon salt and almond extract.

5Add the scalded milk gradually to the egg mixture, then stir in rice.

6Pour into a 2-quart buttered casserole.

7Set in a pan of hot water and bake at 350° for 1 hour and 15 minutes, or until knife inserted in center comes out clean.
