- 4 Tbsp. Pancetta (Italian cured bacon), chopped
- 3 Tbsp. olive oil
- 1 medium onion, chopped
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 2 eggs, beaten
- 12 oz. heavy cream
- 4 Tbsp. Romano cheese
- 2 Tbsp. Italian parsley
- 1/2 tsp. nutmeg
- fresh pepper
- 1 lb. pasta
- black pepper
Directions

1Saute Pancetta in olive oil for 3 minutes.

2Add peppers and onions, saute until onions begin to brown.

3Add cream, nutmeg, 1/2 parsley and twist of pepper.

4Bring cream to simmer and stir. Cook for 2 minutes.

5Cook pasta so that it is ready when sauce is finished.

6The sauce will not hold well, move quickly.
