Ruby Fruit Compote Recipe

Ingredients

  • 1 can (16 ounce.) Thank You Dark Pitted sweet cherries
  • 1/3 c. sugar
  • 1 tbsp. cornstarch
  • Dash of salt
  • 1 teaspoon lemon juice
  • 1 pkg. (10 ounce.) frzn unsweetened strawberries
  • 1 pkg. (10 ounce.) frzn red raspberries
  • Whipped cream

Directions

    Drain cherries, reserving syrup.

    Add in sufficient water to syrup to measure 1 c..

    Blend sugar, cornstarch and salt in saucepan, add in reserved syrup.

    Cook and stir till thick and bubbly.

    Add in lemon juice.

    Stir in cherries and strawberries and raspberries.

    Refrigeratethoroughly.

    Spoon into sherbet glasses.

    Top with dollop of whipped cream or possibly lowfat sour cream.
