  • 2 cups pecans
  • 6 tablespoons light corn syrup
  • 4 ounces gold or dark rum
  • 3 cups confectioners sugar
  • 3 tablespoons unsweetened cocoa
  • extra confectioners for dusting

Directions

    Mix vanilla wafers and pecans in a food processor

    Add corn syrup and rum

    Add confectioners sugar and cocoa

    Place mixture in refrigerator for 3 days, adding a little rum each day

    On 3rd day, roll into eyeball-sized balls in your hands, then roll in confectioners sugar
