Rum Raisin Rice Pudding

  • 1/3 cup raisins chopped
  • 1/4 cup rum
  • 2 eggs
  • 1/2 cup heavy cream
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 2 1/2 ounces cooked white rice
  • 2 teaspoons cinnamon sugar
  • ice cream to serve

    Preheat oven to 325°F. Place a medium baking dish in a large roasting pan. Combine raisins and rum. Set aside for 10 mins to plump.

    Whisk together eggs, cream, milk and sugar. Add rice and raisin mixture. Pour into baking dish and sprinkle with cinnamon sugar. Add enough boiling water to roasting pan to come halfway up sides of baking dish. Bake for 35-40 mins, until just set. Serve warm with ice cream.
