7 steps

Ingredients

  • 2 c. flour
  • 1/2 level tsp. salt
  • 4 level tsp. Rumford baking powder
  • 2 level Tbsp. Crisco or lard
  • 1/2 c. milk, mixed with 1/4 c. water

Directions

  1. 1
Sift flour, salt and baking powder together.
  2. 2
Rub in shortening as lightly as possible with fingers, just working until the fat is blended with flour.
  3. 3
Then mix a very soft dough with liquids (keeping liquid as cold as possible).
  4. 4
Mix with pastry blender or knife rather than spoon or hand, as blades or knife edge is colder and also because it cuts and mixes the dough more thoroughly.
  5. 5
Turn the dough onto a well floured board and roll or pat with hand until about 3/4-inch thick.
  6. 6
Cut into biscuit and lay them not touching on a baking pan.
  7. 7
Bake in quick (about 400°) oven 12 to 14 minutes.
