- 1 chopped onion
- 16 oz. can tomatoes
- 1/2 c. uncooked rice
- 1/2 c. water
- salt and pepper
- 1 tsp. sugar
- 5 to 6 lb. eye of round roast
- 10 to 15 lb. rock salt
- 2 cans beef broth
Directions

1Line large, shallow baking pan with 2 layers of heavy-duty foil.

2Pour salt into pan, about 1 to 1 1/2 inches deep.

3Moisten with water and press down evenly in bottom.

4Make small indentation in middle.

5Lay roast directly on salt on indentation. Cover with salt.

6Sprinkle with water and press firmly around roast, covering completely, about 1 to 1 1/2-inch thick layer.
