Mexican Peas

  • 32 oz. pkg. Pictsweet black-eyed peas
  • 2 Tbsp. margarine
  • 1 c. Pictsweet chopped onion
  • 3/4 c. Pictsweet chopped green peppers
  • 10 3/4 oz. can stewed tomatoes
  • 4 oz. can chopped green chilies
  • 1/2 c. commerical salsa, divided
  • 1 1/2 c. shredded Cheddar cheese

Directions

    Preheat oven to 375°.

    Prepare peas according to cooking instructions, drain.

    Saute onion and pepper in margarine and add next 3 ingredients, set aside.

    Combine peas and remaining salsa and spoon into an ungreased baking dish.

    Pour onion mixture over peas and bake for 30 minutes.

    Sprinkle with cheese and bake an additional 5 minutes.

    Serves as a dip.
