Russian Cabbage Soup

Ingredients

  • 1 1/2 lbs chuck, cut into 1 inch cubes
  • 2 cups cooked tomatoes, , chopped
  • 1 large onion, chopped
  • 1 bay leaf
  • 1 clove garlic, minced
  • 3 quarts cold water
  • 1 medium head of cabbage, shredded
  • 2 teaspoons white vinegar
  • 2 teaspoons white sugar
  • 1 teaspoon lemon juice
  • sour cream
  • salt and pepper

Directions

    In a large soup pot cover the beef, tomatoes, onion, bay leaf and garlic with cold water.

    Let stand for 1 hour and simmer covered for 3 hours.

    Remove the bay leaf, add cabbage, sugar, onion, salt and pepper.

    Simmer for 15 minutes more.

    Remove from heat, add lemon juice and offer Sour Cream at the table.
