- 2 1/2 c. flour
- 2 Tbsp. sugar
- 3/4 tsp. salt
- 1 pkg. dry yeast
- 1 1/2 c. milk
- 1/4 c. water
- 1/3 c. margarine
- 3 eggs, separated (room temperature)
Directions

1Combine flour, sugar, salt and yeast.

2Heat milk, water and margarine until very warm (120° to 130°).

3Add to dry ingredients; beat 2 minutes at medium speed.

4Add egg yolks; continue beating at medium speed for 2 minutes.

5Cover; let rise until doubled, about 50 minutes.

6Beat egg whites until soft peaks form.

7Stir batter down.

8Fold egg whites into batter; let stand 10 minutes. Pour 1/4 cup into hot, greased griddle.

9Bake until puffed and bubbly; turn and bake until nicely browned.

10Stir batter down occasionally.
