- 1 lb. lean ground meat (beef or pork)
- 2 Tbsp. flour
- 2 Tbsp. vegetable oil
- 1/2 c. chopped onions
- 1/2 c. chopped celery
- 1/2 c. green pepper, chopped
- 2 tsp. salt
- 1/4 tsp. each: black and red pepper
- 1 c. chicken broth
- 3 c. hot cooked rice
- 1/2 c. chopped green onion tops
Directions

1Brown flour in oil and add onions, celery and green pepper. Cook until tender.

2Stir in ground meat and seasoning.

3Continue cooking until meat loses red coloring.

4Blend in broth.

5Cover and simmer 25 minutes.

6Stir in rice and onion tops.

7Cook 5 minutes longer.

8Serves 6.
