- 1/2 teaspoon vegetable oil
- 2 tablespoons chopped onion
- 1/3 cup basmati rice, uncooked
- Dash of saffron
- 1 cup canned low-sodium chicken broth, undiluted
- 3 tablespoons no-salt-added tomato sauce
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon chopped fresh parsley
Directions

1Coat a medium nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add onion; saute 3 minutes. Add rice and saffron; saute 2 minutes. Add chicken broth, tomato sauce, salt, and pepper; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender and liquid is absorbed. Sprinkle with parsley.
