  • 3/4 pound romaine lettuce
  • 3 fresh, medium whole tomatoes
  • 4 cup black beans cooked or canned without added salt
  • 2 carrot
  • 1/2 cup
  • 1/2 cup unsalted, roasted soy nuts
  • 32 ounce fat-free milk
  • 4 apple

Directions

    Chop lettuce and tomatoes; combine in bowl and top with black beans (drained).

    Peel and then grate or chop carrots; sprinkle on top of salad.

    Split salad between four people, and serve everyone a glass of milk (8 ounces = 1 cup) and an apple.
