Ingredients

  • 4 large potatoes
  • 15 ounces beets
  • 15 ounces corn
  • 3 large carrots, shredded
  • 1 small onion, chopped
  • 1 12 cups mayonnaise
  • 1 garlic clove, minced
  • 2 tablespoons oil
  • 2 tablespoons vinegar
  • salt

Directions

    Cook and dice potatoes.

    Dice the beets.

    Put all ingredients into a large bowl.

    Make sure corn and beets are well drained.

    Mix dressing ingredients in a small bowl with a wire whisk.

    Consistency should be like commercial bottled salad dressing.

    Increase mayonnaise, if needed.

    Pour dressing over salad and mix well.

    Keep refrigerated until serving.

    Optional ingredients: asparagus, eggs, and/or tomatoes.
