- 4 large potatoes
- 15 ounces beets
- 15 ounces corn
- 3 large carrots, shredded
- 1 small onion, chopped
- 1 12 cups mayonnaise
- 1 garlic clove, minced
- 2 tablespoons oil
- 2 tablespoons vinegar
- salt
Directions

1Cook and dice potatoes.

2Dice the beets.

3Put all ingredients into a large bowl.

4Make sure corn and beets are well drained.

5Mix dressing ingredients in a small bowl with a wire whisk.

6Consistency should be like commercial bottled salad dressing.

7Increase mayonnaise, if needed.

8Pour dressing over salad and mix well.

9Keep refrigerated until serving.

10Optional ingredients: asparagus, eggs, and/or tomatoes.
