  • 425 can Corn kernels
  • 2 Zucchini finger
  • 1 medium red onion
  • 1/2 Red capsicum
  • 1 Handful of snow peas
  • 2 tbsp Fresh parsley
  • 1 Punnet cherry tomatoes
  • 1 Avocado
  • 1 Juice of 1/2 a lemon
  • 2 small red chilli
  • 1 Salt & pepper

Directions

    Finely dice onion, capsicum & zucchini and throw in a bowl with corn kernels.

    Finely slice snow peas and chilli, throw in the bowl.

    Chop avocado and parsley, halve tomatoes and add the the bowl.

    Squeeze some lemon juice season with salt and pepper and you are home!
