  • 4 lb. hamburger
  • 1/4 c. Morton Tender Quick
  • 2 Tbsp. liquid smoke
  • 2 tsp. coarse peppercorns
  • 2 tsp. garlic powder

Directions

    Mix together hamburger and Morton Tender Quick and refrigerate overnight.

    The next day, mix remaining ingredients with meat mixture and divide into 3 parts.

    Roll each part into long rolls and wrap in nylon net and place on a wire rack in a pan and bake at 225° for 4 hours.

    Wrap in a paper towel to absorb grease. Wrap in foil and refrigerate.
