  • 5 lb. hamburger
  • 5 Tbsp. Tender Quick Salt (feed store)
  • 2 1/2 tsp. cracked pepper
  • 2 1/2 tsp. mustard seed
  • 2 1/2 tsp. garlic powder or salt
  • 2 1/2 tsp. liquid smoke

Directions

    Mix together all ingredients and knead for 5 minutes.

    Pack tightly and cover.

    Put in refrigerator.

    Knead mixture for 5 minutes on the 2nd and 3rd day.

    On the 4th day knead again for 5 minutes.

    Form into 1 pound rolls.

    Bake on broiler pan.

    Set oven on 175° to 200°.

    Bake for 4 hours.

    Turn rolls every hour.

    Meat will appear red when fully cooked.
