Salmon Barbecue

- 10 lb. salmon, filleted (skin left on)
- 8 Tbsp. melted butter
- 1/4 ??? fresh lemon juice
- 1/4 tsp. dried oregano
Directions

1Melt butter and mix with lemon juice and oregano.

2Brush mixture over salmon fillets.

3Lightly salt and pepper fillets. Let salmon stand at room temperature for 1 hour.

4Place fillets, skin side down, on a piece of aluminum foil.

5Fold up sides of foil to form a side about 1/2-inch high.

6Place foil on barbecue over wood or charcoal embers.

7Cover salmon with grill lid or piece of foil.

8Every 5 to 10 minutes, baste fish with sauce. Cooking time should be 25 to 30 minutes.

9Fish is done when it flakes with fork.
