Grits Casserole

  • 4 c. water
  • 1 tsp. salt
  • 1 c. quick cooking grits
  • 4 eggs, slightly beaten
  • 1/2 c. milk
  • 1/4 c. softened oleo
  • 1 lb. pork sausage, browned and drained
  • 1 1/2 c. (6 oz.) sharp shredded Cheddar, divided

Directions

    In saucepan, bring water and salt to boil.

    Slowly stir in grits.

    Reduce heat and cook 4 to 5 minutes, stirring occasionally.

    Remove grits from heat and add a small amount of grits into eggs.

    Return to saucepan, stir in sausage, 1 cup cheese, milk and oleo.

    Stir until oleo melts.

    Pour into greased 9 x 13-inch pan.

    Sprinkle with remaining cheese.

    Bake at 350° for 50 to 55 minutes, or until starts to brown.
