Salmon Bisque

Ingredients
- 1/4 c. butter (1/2 stick)
- 1 medium onion, finely chopped
- 1 c. celery, finely chopped
- 3 Tbsp. flour
- 1/2 medium green pepper, finely chopped
- 1 tsp. salt
- 1/8 tsp. pepper
- 4 c. milk
- 1 can salmon (15 oz.)
- 2 Tbsp. pimento, chopped (optional)
Directions

1In saucepan, melt butter, saute onion, green pepper and celery until tender.

2Stir in flour, salt and pepper.

3Remove from heat and gradually add milk.

4Return to heat and cook, stirring constantly, until thickened.

5Add salmon which has been flaked and the soft bones crushed.

6Stir in pimento at this time.

7Simmer until serving temperature.

8Makes six 8 ounce servings.
