Salmon Bisque

Ingredients

  • 1/4 c. butter (1/2 stick)
  • 1 medium onion, finely chopped
  • 1 c. celery, finely chopped
  • 3 Tbsp. flour
  • 1/2 medium green pepper, finely chopped
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 4 c. milk
  • 1 can salmon (15 oz.)
  • 2 Tbsp. pimento, chopped (optional)

Directions

    In saucepan, melt butter, saute onion, green pepper and celery until tender.

    Stir in flour, salt and pepper.

    Remove from heat and gradually add milk.

    Return to heat and cook, stirring constantly, until thickened.

    Add salmon which has been flaked and the soft bones crushed.

    Stir in pimento at this time.

    Simmer until serving temperature.

    Makes six 8 ounce servings.
