- 1 (about 15 oz.) can pink salmon, drained and flaked
- 2 c. fresh bread crumbs
- 1/3 c. chopped scallions
- 1 large egg
- 1/4 tsp. each salt and pepper
- 2 Tbsp. vegetable oil
Directions

1Thoroughly mix all ingredients except oil.

2With water moistened hands, shape in 8 patties, using 1/4 cup mixture for each.

3Heat oil in large skillet over medium heat.

4Add patties and cook about 3 minutes per side, until golden brown.
