  • 2 eggs
  • 1/4 c heavy cream
  • 1/4 c cornmeal
  • 2 T green onions, sliced
  • 2 T flour
  • 1/4 t baking powder
  • pinch black pepper
  • 1/2 t salt
  • 2 T butter or margarine
  • 1-14 3/4 oz can salmon, drained, skinned and boned

Directions

    Beat eggs in a medium sized bowl.

    Add all ingredients except butter and salmon.

    Mix well.

    Flake salmon into mixture and stir until blended.

    Melt butter in skillet.

    Shape salmon mixture into patties and fry over medium heat until golden brown (about 5 minutes).
