Salmon Cakes

- 2 eggs
- 1/4 c heavy cream
- 1/4 c cornmeal
- 2 T green onions, sliced
- 2 T flour
- 1/4 t baking powder
- pinch black pepper
- 1/2 t salt
- 2 T butter or margarine
- 1-14 3/4 oz can salmon, drained, skinned and boned
Directions

1Beat eggs in a medium sized bowl.

2Add all ingredients except butter and salmon.

3Mix well.

4Flake salmon into mixture and stir until blended.

5Melt butter in skillet.

6Shape salmon mixture into patties and fry over medium heat until golden brown (about 5 minutes).
