- 1 c. pink salmon
- 3/4 c. Italian bread crumbs
- 1 tsp. regular mustard
- 1 heaping Tbsp. mayonnaise
- 1/2 small onion, chopped fine
- 1 Tbsp. green pepper, chopped
- 1 egg, beaten
- 1/2 tsp. seafood seasoning
Directions

1Drain juice from salmon into a bowl.

2Set salmon aside.

3Add bread crumbs to juice; let stand until thick.

4Stir next 6 ingredients and mix well.

5Add salmon and stir.

6Makes 6 or 7 cakes.

7Fry as you would crab cakes.
