Salmon Casserole

Ingredients
- 1 lb. can salmon
- 1/4 c. oil
- 1 tsp. onion, chopped fine
- 1 1/2 c. soft bread crumbs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- salmon liquor
- milk
- 1 tsp. lemon juice
- 1/4 tsp. lemon rind, grated
- 1 Tbsp. chopped parsley
- 1 egg, slightly beaten
Directions

1Remove bones and skin from salmon and separate into flakes. Melt oil in frying pan.

2Add onion and cook until yellow, then add bread crumbs, salt and pepper; brown lightly.

3Put salmon liquor into cup and add enough milk to make one cup.

4Combine salmon, crumbs and liquor.

5Add lemon juice, rind, parsley and egg; blend, being careful not to mash salmon.

6Pour into greased 8-inch casserole.

7Bake at 375° for 30 minutes.

8Serves 6.
