Salmon Casserole

- 1 pt. canned salmon (reserve juice)
- 1 small can peas, can use more
- 3 or 4 large potatoes, sliced thin
- 1 c. shredded carrots*
- 1 medium onion, chopped
- 1 can cream of mushroom or cream of celery soup, dilute with pea and salmon juice
- salt and pepper to taste
- 1/2 c. crushed croutons or cracker crumbs
Directions

1Grease casserole well.

2Put 3 or 4 layers of potatoes in the bottom.

3Salt and pepper.

4Top with half of the salmon.

5Add peas on top of salmon, three more layers of potatoes, salt and pepper and rest of salmon.

6Finish with the carrots mixed with onion.

7Pat down gently.

8Pour diluted soup over casserole.

9Top with crumbs. Dot with margarine (optional).

10Bake, covered, at 350° for 50 to 60 minutes.
